Scrambled Eggs

This recipe is for two servings


  • 4 large eggs
  • 1 tablespoon olive or coconut oil
  • 1 tablespoon coconut milk or heavy cream
  • Salt, pepper and chives to taste
  • 4 cups chopped spinach
  • ½ cup cheddar cheese (Optional)


  1. Combine your eggs, double cream/ coconut milk, salt, pepper and chives in a bowl
  2. In a pan add your oil of choice. 
  3. When the oil is hot add spinach
  4. Add egg mix to the pan
  5. Garnish your scrambled eggs with cheese
