Halloumi Burgers

This recipe id for 2 servings

Ingredients

  • 7 oz / 200g halloumi cheese
  • 4 leaves of iceberg lettuce
  • ½ tomato
  • ½ avocado
  • 3 tablespoon  mascarpone 
  • 2 tablespoon Reduced Sugar Ketchup
  • 3 tablespoon full fat mayonnaise 
90 second bread
  • 1 egg
  • ¾ tablespoon ground psyllium husk powder
  • 1 tablespoon melted butter
  • 1 tablespoon double cream
  • 4 tablespoon ground
  • 1 cup shredded cheese (or lactofree cheese)

 

Bread

  1. Combine dry ingredients to a bowl microwave safe bowl.
  2. Add egg, melted butter and double cream and mix well.
  3. Place in the mixture in the microwave for 2 minutes.
  4. Slice bread in half two make two semi circles. 
  5. Slice the semi circle in half to make two more thinner semi circles
  6. Place on a frying pan on medium heat until bread is slightly brown.

Halloumi Burger

  1. Mix mascarpone, mayonnaise 
  2. Rinse the lettuce and slice tomato and avocado.
  3. Grill halloumi until brown
  4. Build the burger and serve.
